General Manager Mateo Torres was born in Columbia, but grew up in nearby East Quogue. He boasts about how the East End has so much to offer from beaches, to vineyards, to golf courses. Mateo was in high school when he began bussing tables, which led him to serving at Centro in Hampton Bays during and after college. While earning his degree in Business Management, his passion for the restaurant industry was solidified. Mateo enjoys time by the water with a good book, playing golf, and visiting vineyards with friends. When he’s dining at Frisky, it’s usually Friskafella’s or Duck Sliders.
My Abuela’s Bandeja Piasa, a traditional Columbian dish to the area where I was born. The main characteristic of this dish is the generous amount and variety of food in a traditional bandeja paisa: red beans cooked with pork, white rice, carne molida (ground meat), chicharrón, fried egg, plátano maduro (plantain), chorizo, arepa, hogao sauce, morcilla (black pudding), avocado, and lemon.
